Ingredients:
- 1 1/2 cup sweet rice flour
- 1 cup sugar
- 1 teaspoon baking powder
- 3 large eggs
- 1 (13.5-ounce) can coconut milk
- 1 1/2 teaspoon grated orange zest
- 1 1/2 teaspoon pure vanilla extract
Method:
Preheat the oven to 350°F. In a large bowl, whisk together flour, sugar
and baking powder. In a separate bowl, whisk eggs until blended. Add
coconut milk, orange zest and vanilla, and whisk until combined. Add
coconut milk mixture to flour mixture and whisk until combined.
Pour batter into an 8x8-inch baking pan. Bake about 1 hour or until a toothpick inserted into the center comes out clean. Cool completely in the pan on a wire rack.
