I'm getting this blog MUCH closer to where I want it to be, but it's still a slight work in progress. I've been anxious to get this blog up and running efficiently in order to be a helpful tool for myself and others, but it's been hard balancing all of this alongside trying to manage all of life's obstacles and commitments! healthy CHOCOLATE pudding

The unexpected secret ingredient (avocados!) in this chocolate pudding recipe makes all the difference. Super-creamy avocados and banana make up the base of this fabulous dessert, which boasts no added oil or refined sugar. Pack this pudding in lunch boxes or serve it with berries for a perfect evening treat.


Ingredients
  • 2 avocados, peeled and pitted
  • 1 banana
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup pitted dates, soaked in water for a few hours and drained
  • 1 teaspoon pure vanilla extract
Method
Combine avocados, banana, cocoa powder, dates and vanilla in a food processor and purée until smooth, scraping down sides of food processor bowl as needed. Transfer to a bowl or individual serving bowls and refrigerate several hours and up to 3 days before serving.

Per Serving: 190 calories (90 from fat), 10g total fat, 1.5g saturated fat, 25g carbohydrates, (7 g dietary fiber, 13g sugar), 3g protein.
