it's getting there!
I'm getting this blog MUCH closer to where I want it to be, but it's still a slight work in progress. I've been anxious to get this blog up and running efficiently in order to be a helpful tool for myself and others, but it's been hard balancing all of this alongside trying to manage all of life's obstacles and commitments! Thank you so much for your patience!

how to cook BROWN RICE
Serves 4
Ingredients:
1 cup brown rice
2 cups water
Method:
Put rice and water into a small pot and bring to a boil over medium-high heat. Reduce heat to medium-low, cover pot and simmer until liquid is completely absorbed and rice is just tender, about 40 minutes. No peeking until then; valuable steam escapes! Set covered pot aside off of the heat for 10 minutes then uncover and fluff rice with a fork.

easy PLUM JAM with CHIA SEEDS
This super-easy jam gets all its thickness from chia seeds, not from a lot of added sugar.
Makes about 2 1/4 cups
Ingredients:
1 1/2 pound plums, diced (about 3 cups)
2 tablespoons chia seeds
Method:
Combine plums and 1/4 cup water in a medium saucepan. Set over medium heat, cover and cook, stirring frequently, until fruit is very soft, about 15 minutes. Remove from heat. Stir in chia seeds and let cool slightly.
If needed, transfer plum mixture to a food processor and pulse until a chunky jam forms. Spoon into 1 large or several smaller glass jars, cover and refrigerate for at least 3 hours to allow the jam to thicken. The jam will keep refrigerated for up to 1 week.
